  • 4 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 3 tablespoons plant-based milk
  • 1 tablespoon ground cinnamon (optional, for flavor in frosting)
  • Brown food coloring
  • Orange food coloring

Instructions

  1. Preheat your oven to 350°F and prepare two 8-inch round cake pans by greasing them and lining with parchment paper.
  2. In a large bowl, whisk together the dry ingredients: flour, sugars, baking soda, baking powder, spices, and salt.
  3. In another bowl, combine wet ingredients: pumpkin puree, applesauce, canola oil, vanilla extract, apple cider vinegar, and plant-based milk.
  4. Mix the wet ingredients into the dry until just combined; avoid overmixing.
  5. Pour batter into prepared pans and bake for 28-32 minutes or until a skewer comes out clean.
