  • 6 cups Rice Krispies cereal
  • 4 tablespoons unsalted butter
  • 10 ounces mini marshmallows
  • 1 teaspoon mint extract
  • Green food coloring (optional)
  • 1 cup semisweet chocolate chips
  • 1 cup white chocolate chips

Instructions

  1. In a large pot over low heat, melt the butter. Add marshmallows and stir until fully melted and smooth.
  2. Mix in mint extract and optional green food coloring until desired color is achieved.
  3. Gently fold in Rice Krispies until evenly coated with the marshmallow mixture.
  4. Stir in semisweet chocolate chips until well combined.
  5. Transfer to a greased 9×13 inch baking dish, pressing down evenly with a spatula or wax paper.
  6. Melt white chocolate chips in a microwave-safe bowl; drizzle over the top of the treats.
  7. Allow to cool completely before cutting into squares.
