  • 1 medium yellow onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup beef broth
  • 1/4 cup red wine
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • Salt, to taste
  • Black pepper, freshly ground, to taste
  • 1 pound spaghetti
  • 1/2 cup shredded Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced onion, carrots, and celery. Cook, stirring occasionally, until vegetables soften, about 8-10 minutes.
  2. Add minced garlic to the skillet and cook for 1 minute more until fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 8-10 minutes. Drain any excess fat.
  4. Stir in the crushed tomatoes, tomato sauce, beef broth, and red wine. Add dried oregano, dried basil, and red pepper flakes. Season with salt and black pepper.
  5. Bring the sauce to a simmer, then reduce heat to low, cover, and let it cook for at least 30 minutes, or up to 2 hours, stirring occasionally. The longer it simmers, the richer the flavor.
  6. About 15 minutes before serving, cook the spaghetti according to package directions in a large pot of salted boiling water until al dente. Drain well.
  7. Serve the cooked spaghetti hot, topped with generous portions of the Bolognese sauce. Garnish each serving with shredded Parmesan cheese.
