- 2 stalks celery
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter
- 1/2 cup milk
Instructions
- Heat olive oil in a skillet over medium-high heat; brown beef cubes in batches and transfer to a slow cooker.
- Sauté chopped onion until softened; add minced garlic and sauté briefly. Transfer onion-garlic mixture to the slow cooker.
- Add beef broth, undrained diced tomatoes, Worcestershire sauce, thyme, and black pepper to the slow cooker.
- Stir in quartered potatoes, carrots, and celery; cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
- Prepare dumplings: Mix flour, baking powder, and salt in a bowl. Cut in butter until crumbly; stir in milk to form dough.
- Create a cornstarch slurry with cornstarch and cold water; stir into stew when tender.
- Drop dumpling dough onto hot stew; cover and cook on high for another 20-30 minutes until fluffy.
- Serve garnished with fresh parsley.
