  • 2 tablespoons shelled pumpkin seeds (pepitas)
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and salt; set aside.
  3. In a large mixing bowl, cream butter and sugars until fluffy (2–3 minutes). Add egg and vanilla; mix well.
  4. Stir in pumpkin puree until combined. Gradually incorporate dry ingredients until just mixed.
  5. Drop rounded tablespoons of dough onto prepared sheets, spacing them apart.
  6. Bake for 10–12 minutes until edges are golden and centers set. Cool on sheets for 5 minutes before transferring to wire racks.
  7. For frosting: Beat softened cream cheese and butter until smooth. Gradually add powdered sugar; mix until fluffy and stir in vanilla.
