  • 1 cup sour cream
  • ½ cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 medium onion, finely chopped
  • ½ cup breadcrumbs (optional)
  • 2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil diced potatoes in salted water for about 10-12 minutes until tender; drain.
  3. In a skillet, heat olive oil over medium heat and cook chicken seasoned with salt, pepper, garlic powder, and paprika until browned.
  4. In a mixing bowl, combine cooked potatoes, chicken, chopped onion, sour cream, milk, dried thyme, and half of the cheddar cheese.
  5. Transfer to a greased baking dish; top with remaining cheese (and breadcrumbs if desired).
