  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 3 cups pecan halves

Instructions

  1. Preheat your oven to 350°F and line a 9×13 inch baking pan with parchment paper.
  2. For the crust: In a bowl, cream together 1 cup softened butter and 1/2 cup granulated sugar until fluffy. Gradually add 2 cups all-purpose flour to form a soft dough.
  3. Press the dough evenly into the bottom of the prepared pan and bake for 18-20 minutes until golden. Set aside and reduce the oven temperature to 325°F.
  4. For the topping: Melt 1 cup butter in a saucepan over medium heat, then stir in 1 cup brown sugar and 1/2 cup corn syrup. Bring to a boil while stirring constantly.
  5. Lower the heat and simmer for 5 minutes before removing from heat. Stir in 1 teaspoon vanilla extract and coat 3 cups pecan halves in the caramel mixture.
  6. Pour the pecan caramel over the baked crust and return to the oven for another 20-25 minutes until bubbly.
  7. Let cool completely in the pan on a wire rack before lifting out using parchment paper and cutting into squares.
