  • 2 pounds beef chuck
  • 1/4 cup all-purpose flour
  • 1 large yellow onion
  • 3 cloves garlic
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1.5 pounds Yukon gold potatoes
  • 1 pound carrots
  • Fresh parsley (for garnish)

Instructions

  1. Toss beef chuck pieces with flour, salt, and pepper until coated.
  2. Set Instant Pot to 'Sauté' mode; heat vegetable oil and sear half of the beef for 3-4 minutes per side until browned. Remove and repeat with remaining beef.
  3. Sauté chopped onion for 3-4 minutes until softened; add minced garlic and cook for 1 minute.
  4. Pour in beef broth to deglaze the pot; stir in Worcestershire sauce, tomato paste, thyme, and bay leaf.
  5. Return all seared beef to pot; layer potatoes and carrots on top without stirring.
  6. Secure lid; set vent to 'Sealing.' Cook on High pressure for 35 minutes.
  7. Allow for a Natural Pressure Release for 10 minutes; then Quick Release any remaining pressure.
  8. Remove lid, discard bay leaf, stir the stew to combine ingredients, and thicken the sauce.
  9. Serve hot in bowls garnished with fresh parsley.
