  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 medium Russet potatoes, peeled and thinly sliced into rounds
  • 2 cups shredded sharp cheddar cheese
  • 1.5 cups beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F and grease a 9×13 inch baking dish.
  2. In a skillet, heat olive oil over medium-high heat. Cook ground beef until browned, then drain excess grease.
  3. Add chopped onion and minced garlic to the skillet; cook until softened (about 5 minutes). Season with salt and pepper.
  4. Layer one-third of potato slices in the baking dish, followed by half of the beef mixture and one-third of the cheese.
  5. Repeat layering: potatoes, remaining beef, and cheese.
  6. Top with remaining potatoes and pour beef broth over everything.
  7. Cover with aluminum foil and bake for 45 minutes.
  8. Remove foil, add remaining cheese on top, and bake uncovered for an additional 15-20 minutes until potatoes are tender and cheese is golden brown.
  9. Let stand for 5 minutes before serving; garnish with parsley.
