  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 large yellow onion
  • 4 cloves garlic
  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 ounces)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 3 large carrots
  • 2 pounds russet potatoes
  • Fresh parsley (for garnish)

Instructions

  1. Pat beef dry; season with salt and pepper, then toss with flour.
  2. In a Dutch oven, heat oil over medium-high heat. Brown beef in batches; set aside.
  3. Sauté onion until softened; add garlic and cook until fragrant.
  4. Deglaze pot with 1 cup beef broth, scraping any browned bits.
  5. Return beef to the pot; add remaining broth, tomatoes, Worcestershire sauce, thyme, bay leaf, salt, and pepper.
  6. Simmer covered for 1 hour and 30 minutes.
  7. Add carrots and potatoes; continue to simmer for another 20-30 minutes or until tender.
  8. Remove bay leaf before serving; garnish with fresh parsley.
