  • 2 pounds beef chuck
  • 1/4 cup all-purpose flour
  • 1 large yellow onion
  • 2 carrots
  • 2 celery stalks
  • 3 cloves garlic
  • 1 (14.9-ounce) can Guinness stout
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 1/2 pounds Yukon Gold potatoes
  • 1/4 cup fresh parsley, chopped, for garnish
  • 2 sprigs fresh thyme, for garnish

Instructions

  1. Toss beef cubes with flour, salt, and pepper until evenly coated.
  2. Heat olive oil in a Dutch oven over medium-high heat and sear the beef until browned. Remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened. Add garlic and cook briefly.
  4. Pour in Guinness stout, scraping up browned bits. Simmer for 2 minutes.
  5. Stir in beef broth, tomato paste, thyme, and bay leaf. Return beef to pot; bring to boil then reduce to low heat and simmer for 1 hour.
  6. Add cubed potatoes; cover and simmer for another 45 minutes to an hour until tender.
  7. Remove bay leaf before serving; garnish with parsley and thyme.
