Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1 ½ pounds tomatillos
  • 1 tablespoon vegetable oil
  • 1 large white onion, roughly chopped, divided
  • 4 cloves garlic, peeled
  • 2 poblano peppers, stemmed and seeded
  • 1 jalapeño pepper, stemmed and seeded (or serrano for more heat)
  • 1 cup fresh cilantro, packed
  • 8 cups chicken broth, divided
  • 1 teaspoon ground cumin
  • ½ teaspoon dried Mexican oregano
  • 1 (25 ounce) can hominy, drained and rinsed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ head green cabbage, thinly shredded
  • 6 radishes, thinly sliced
  • 2 limes, cut into wedges
  • ¼ cup fresh cilantro, chopped

Instructions

  1. In a large pot, cover the chicken breasts with 4 cups of chicken broth. Bring to a boil and simmer for 20-25 minutes until fully cooked. Remove the chicken, let cool slightly, then shred.
  2. In a skillet over medium-high heat, heat vegetable oil. Add tomatillos, half of the onion, garlic, poblano peppers, and jalapeño. Cook until softened and slightly charred (10-12 minutes).
  3. Transfer the vegetables to a blender with remaining onion, cilantro, 1 cup broth, cumin, oregano, salt, and pepper. Blend until smooth.
  4. Pour the green sauce into the pot along with the remaining broth. Bring to a simmer and add drained hominy and shredded chicken. Simmer for another 15-20 minutes.
  5. Adjust seasoning as needed before serving in bowls topped with cabbage, radishes, lime wedges, and cilantro.
