  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground chicken
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 2 cups chicken broth
  • 1 cup pumpkin, peeled and cut into 1/2-inch cubes
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped, for garnish
  • 1/2 teaspoon red pepper flakes, for garnish

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and cook for about 5 minutes until softened. Stir in minced garlic and cook for an additional minute.
  2. Add ground chicken to the pot, breaking it apart as it cooks until browned (8-10 minutes). Drain excess fat if needed.
  3. Mix in chili powder, cumin, paprika, salt, and black pepper. Toast spices for 1 minute while stirring.
  4. Add undrained diced tomatoes, rinsed cannellini beans, chicken broth, and pumpkin cubes. Stir well.
  5. Bring to a boil then reduce heat to low. Cover and simmer for 20-25 minutes until pumpkin is tender.
  6. Serve hot in bowls garnished with chopped cilantro and red pepper flakes.
