Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 pounds carrots, peeled and roughly chopped
  • 4 cups low-sodium vegetable broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped, for garnish
  • 4 slices rustic bread, toasted, for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent (5-7 minutes).
  2. Stir in minced garlic and grated ginger; cook for 1 minute.
  3. Add chopped carrots, vegetable broth, salt, and pepper. Bring to a boil, reduce heat, cover, and simmer for 20-25 minutes until carrots are tender.
  4. Blend the mixture using an immersion blender until smooth or carefully transfer to a standard blender in batches.
  5. Return the soup to low heat and stir in heavy cream; warm for 2-3 minutes without boiling.
  6. Serve hot in bowls garnished with a swirl of cream and parsley, alongside toasted rustic bread.
