  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt to taste

  • 1/2 cup panko breadcrumbs
  • 1/4 cup slivered almonds
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13 inch baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté onion until softened (about 5 minutes), then add garlic and thyme; cook for an additional minute.
  3. Add butternut squash cubes, chicken broth, and heavy cream. Simmer gently, covered, for 10-12 minutes until tender-crisp. Season with salt and pepper.
  4. Stir in Parmesan cheese until melted and well combined.
  5. Transfer the mixture into the prepared baking dish.
  6. In a small bowl, mix panko breadcrumbs, slivered almonds, and melted butter until evenly coated.
  7. Sprinkle the breadcrumb mixture over the squash.
