  • 1 large butternut squash (about 3 pounds), peeled, seeded, and cut into 1-inch cubes
  • 2 large apples (such as Honeycrisp or Gala), peeled, cored, and cut into 1-inch cubes
  • 1/2 cup pecan halves
  • 1/4 cup dried cranberries
  • 1/4 cup packed light brown sugar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F. Lightly grease a 9×13 inch baking dish or a similar capacity fluted baking dish.
  2. In a large bowl, combine the cubed butternut squash and apples.
  3. In a small bowl, whisk together the melted butter, brown sugar, cinnamon, nutmeg, and salt until well combined.
  4. Pour the butter mixture over the squash and apples, tossing gently to coat the cubes evenly.
  5. Transfer the coated squash and apple mixture to the prepared baking dish, spreading it in an even layer.
  6. Bake for 30 minutes, stirring the mixture halfway through to ensure even cooking.
  7. Remove the dish from the oven. Stir in the pecan halves and dried cranberries.
  8. Return to the oven and bake for an additional 15-20 minutes, or until the squash is tender and the apples are soft when pierced with a fork.
