  • 2 pounds boneless beef chuck roast
  • 1 tablespoon vegetable oil
  • 1 large yellow onion
  • 3 cloves garlic
  • 2 pounds Yukon Gold potatoes
  • 2 cups beef broth
  • 1/2 cup water
  • 1/4 cup all-purpose flour
  • 1 tablespoon tomato paste
  • Dried thyme
  • Black pepper
  • Salt
  • Cooked white rice (for serving)
  • Fresh parsley (for garnish)

Instructions

  1. Dry the beef cubes with paper towels. Heat oil in a large skillet over medium-high heat and sear the beef cubes until browned (about 3-4 minutes per side). Transfer to a slow cooker.
  2. In the same skillet, sauté chopped onion for about 5 minutes, then add minced garlic for an additional minute. Transfer to the slow cooker.
  3. In a bowl, whisk together beef broth, water, flour, tomato paste, thyme, black pepper, and salt until smooth. Pour over the beef and onions in the slow cooker.
  4. Add potato chunks into the slow cooker and stir gently to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender and potatoes are cooked through.
  6. Stir before serving and adjust seasoning as needed.
  7. Serve hot over cooked white rice garnished with fresh parsley.
