  • 1 pound ground beef
  • 1 medium yellow onion, minced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 3 medium Russet potatoes, peeled and thinly sliced into 1/4-inch rounds
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/2 cup sour cream, for serving
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 375°F and grease a 9×13 inch baking dish.
  2. In a skillet, heat olive oil over medium-high heat. Brown the ground beef for 5-7 minutes, then drain excess fat.
  3. Add minced onion and cook until softened, about 3-4 minutes. Stir in garlic and cook for an additional minute.
  4. Season with salt, pepper, paprika, and thyme; cook for 1 minute. Add tomato paste and beef broth; simmer for 5 minutes to thicken.
  5. Layer half of the potatoes in the baking dish, top with the beef mixture, then add the remaining potatoes.
  6. Sprinkle cheese over the top and bake for 30-35 minutes until golden and bubbly.
  7. Let stand for 5 minutes before serving with sour cream and parsley.
