- 1 medium yellow onion, minced
- 2 cloves garlic, minced

- 2 tablespoons tomato paste
- 1 cup beef broth
- 3 medium Russet potatoes, peeled and thinly sliced into 1/4-inch rounds
- 1 1/2 cups shredded Monterey Jack cheese
- 1/2 cup sour cream, for serving
- 2 tablespoons fresh parsley, chopped, for garnish
Instructions
- Preheat the oven to 375°F and grease a 9×13 inch baking dish.
- In a skillet, heat olive oil over medium-high heat. Brown the ground beef for 5-7 minutes, then drain excess fat.
- Add minced onion and cook until softened, about 3-4 minutes. Stir in garlic and cook for an additional minute.
- Season with salt, pepper, paprika, and thyme; cook for 1 minute. Add tomato paste and beef broth; simmer for 5 minutes to thicken.
- Layer half of the potatoes in the baking dish, top with the beef mixture, then add the remaining potatoes.
- Sprinkle cheese over the top and bake for 30-35 minutes until golden and bubbly.
- Let stand for 5 minutes before serving with sour cream and parsley.
