  • 1.5 pounds boneless, skinless chicken thighs
  • 2 cups uncooked long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic
  • 1 teaspoon fresh ginger
  • Green onions for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Whisk together chicken broth, soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper in a bowl.
  3. Spread uncooked rice evenly in a 9×13 inch baking dish.
  4. Arrange chicken pieces over the rice.
  5. Pour teriyaki sauce mixture over chicken and rice.
  6. Cover tightly with aluminum foil and bake for 30 minutes.
  7. Remove foil, stir gently, and bake uncovered for another 15-20 minutes until chicken is cooked through and rice is tender.
  8. Let stand for 5 minutes before serving and garnish with green onions.
