  • 4 medium zucchinis
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten
  • Fresh basil and parsley, chopped
  • 1 jar (24 ounces) marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C). Slice zucchinis lengthwise into thin strips using a mandoline or knife. Salt the strips and let sit for 10 minutes before patting dry.
  2. In a mixing bowl, combine ricotta, Parmesan, beaten egg, herbs, garlic powder, salt, and pepper until smooth.
  3. Spread the mixture onto each zucchini strip and roll tightly. Place seam-side down in a baking dish.
  4. Pour marinara sauce over the rolls and sprinkle with mozzarella cheese. Cover with foil.
  5. Bake for 25 minutes covered; then uncover and bake an additional 10-15 minutes until bubbly.
