  • 4 medium zucchinis
  • 2 cups marinara sauce
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Slice zucchinis lengthwise into thin strips using a mandoline or sharp knife. Lay the slices on paper towels and sprinkle with salt; let sit for 10-15 minutes to draw out moisture.
  2. In a bowl, mix ricotta cheese, egg, oregano, basil, salt, and pepper until smooth.
  3. In a baking dish, spread a layer of marinara sauce at the bottom. Layer half of the zucchini slices followed by half of the ricotta mixture and some mozzarella. Repeat the layering process with remaining ingredients and top with Parmesan cheese.
  4. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  5. Allow cooling for about 10 minutes before slicing. Garnish with fresh basil.
