  • 4 medium-sized beets
  • 2 tablespoons olive oil
  • 4 cups mixed greens (arugula, spinach, kale)
  • 4 ounces goat cheese, crumbled
  • ½ cup toasted walnuts
  • ¼ cup dried cranberries (optional)
  • ¼ cup balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and roast on a baking sheet for 45-60 minutes until tender.
  2. Once cooled, peel and slice the beets into wedges.
  3. In a large salad bowl, combine the mixed greens.
  4. In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, olive oil, salt, and pepper to taste.
  5. Add sliced roasted beets to the greens along with crumbled goat cheese, toasted walnuts, and cranberries (if using). Drizzle with dressing and gently toss before serving.
