  • 1 (8 oz) package Neufchatel cheese (light cream cheese), cut into small cubes
  • 1 ¼ cups frozen or fresh corn
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 2 ½ cups shredded cooked rotisserie or leftover chicken
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro, plus more for serving
  • Tortilla chips or strips (optional)
  • Monterey Jack cheese (optional)
  • Sliced avocado (optional)

Instructions

  1. Sauté diced onion in olive oil until softened, then add minced garlic.
  2. Stir in chicken broth, green chilies, and spices; bring to a boil and simmer for 15 minutes.
  3. Puree some cannellini beans (optional) and add them along with the Neufchatel cheese and corn.
