Ingredients

  • 1/2 watermelon (approx. 9 cups), divided
  • 1 cucumber, seeded and diced
  • 1 red bell pepper, seeded and chopped
  • 3 roma tomatoes, seeded and diced
  • 1/4 red onion, diced
  • 1 jalapeño, seeded and diced small
  • 3 Tbsp sherry vinegar
  • 3 Tbsp olive oil
  • Fresh basil and parsley for garnish

Instructions

  1. Whisk together sherry vinegar, olive oil, salt, and pepper in a bowl.
  2. In a blender, combine 4.5 cups of watermelon with half each of the cucumber, bell pepper, tomatoes, and red onion; blend until smooth while adding the vinegar mixture.
  3. Pour into a large container and stir in remaining diced watermelon, cucumber, bell pepper, one tomato, jalapeño, and herbs.
  4. Chill for at least 2 hours before serving; top with extra olive oil and herbs if desired.
