  • 1 1/2 pounds potatoes (cubed)
  • 4 slices bacon (cooked and crumbled)
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon grainy mustard
  • 1 small onion (diced)
  • 2 cloves garlic (chopped)
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Boil the cubed potatoes in a large pot of salted water until just tender, about 10 minutes. Drain well.
  2. In a large pan, cook the bacon until crispy. Set aside, reserving about 2 tablespoons of bacon grease in the pan.
  3. Add diced onion to the pan with reserved grease and sauté until tender, approximately 5 minutes. Stir in chopped garlic and cook for an additional minute.
  4. Mix in apple cider vinegar, Dijon mustard, grainy mustard, salt, and pepper into the pan with onion mixture.
  5. Gently combine boiled potatoes and crumbled bacon into the pan with the dressing. Toss to coat well. Garnish with chopped parsley if desired.
