Ingredients
- 1 1/2 pounds potatoes (cubed)
- 4 slices bacon (cooked and crumbled)
- 1/4 cup apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon grainy mustard
- 1 small onion (diced)
- 2 cloves garlic (chopped)
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Boil the cubed potatoes in a large pot of salted water until just tender, about 10 minutes. Drain well.
- In a large pan, cook the bacon until crispy. Set aside, reserving about 2 tablespoons of bacon grease in the pan.
- Add diced onion to the pan with reserved grease and sauté until tender, approximately 5 minutes. Stir in chopped garlic and cook for an additional minute.
- Mix in apple cider vinegar, Dijon mustard, grainy mustard, salt, and pepper into the pan with onion mixture.
- Gently combine boiled potatoes and crumbled bacon into the pan with the dressing. Toss to coat well. Garnish with chopped parsley if desired.
