- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes with green chilies
- 1 cup corn kernels (fresh or frozen)
- 8 corn tortillas, cut into quarters
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- ½ cup chopped green onions
- 1 tablespoon olive oil
Instructions
- In a skillet over medium heat, cook ground beef with salt, pepper, chili powder, and cumin until browned. Drain excess fat.
- Stir in black beans, diced tomatoes, and corn; heat through for 2-3 minutes.
- Preheat oven to 350°F (175°C). In a greased baking dish, layer beef mixture, tortilla quarters, and cheeses repeatedly until ingredients are used up.
