  • 1 ½ cups graham cracker crumbs
  • â…“ cup melted coconut oil
  • ¼ cup maple syrup
  • 1 ½ cups raw cashews (soaked)
  • â…“ cup coconut cream
  • 2 tablespoons lemon juice
  • ½ cup raspberries

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, coconut oil, and maple syrup until combined. Press into an 8×8 inch baking dish and bake for 10 minutes. Let cool.
  2. Blend soaked cashews, coconut cream, maple syrup, lemon juice, and vanilla extract in a food processor until smooth.
  3. Mash raspberries with additional maple syrup in a separate bowl.
  4. Pour the cashew mixture over the cooled crust and dollop raspberry mash on top. Use a toothpick to swirl gently.
  5. Refrigerate for at least 4 hours to set before slicing into bars.
