  • 2 large leeks (sliced)
  • 3 cloves garlic (minced)
  • 4 medium potatoes (peeled and diced)
  • 4 cups vegetable broth

  • 1 cup unsweetened almond milk
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  2. Stir in diced potatoes, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce heat to low and cover for about 20 minutes until potatoes are tender.
  3. Blend the soup using an immersion blender until smooth or transfer batches to a regular blender.
  4. Return the blended soup to the pot (if using a regular blender) and stir in almond milk. Heat over low until warmed through.
