  • 2 tablespoons unsalted butter
  • 1 cup sour cream
  • ½ cup milk
  • ½ cup shredded cheddar cheese

  • ¼ cup chives, finely chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes and poke holes in them with a fork.
  2. Bake directly on the oven rack for 45-60 minutes until tender. Let cool slightly.
  3. Cut potatoes in half lengthwise and scoop out insides into a mixing bowl.
  4. Add butter, sour cream, milk, cheese, bacon, chives, salt, and pepper to the bowl; mash until smooth.

  6. Place filled potatoes on a baking sheet and bake for an additional 15-20 minutes until golden brown.
