  • 8 ounces penne pasta
  • 1 pound boneless, skinless chicken breasts, diced
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup fresh spinach
  • ½ cup grated Parmesan cheese
  • Olive oil, salt, pepper, dried basil, and oregano for flavoring

Instructions

  1. Cook the penne in salted boiling water until al dente; drain and set aside.
  2. In a skillet over medium heat, sauté diced chicken in olive oil seasoned with salt and pepper until cooked through; remove from skillet.
  3. Sauté minced garlic and sun-dried tomatoes in the same skillet for 2-3 minutes.
  4. Lower heat, add heavy cream, basil, and oregano; simmer for 3-5 minutes until thickened.
  5. Return chicken to the skillet with spinach and penne; stir in Parmesan until melted.
  6. Serve garnished with fresh basil.
