  • 12 ounces cheese tortellini
  • 6 ounces pancetta, diced
  • 1 cup fresh or frozen baby peas
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ÂĽ cup heavy cream
  • ÂĽ cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Cook the tortellini in boiling salted water according to package instructions until al dente. Drain and reserve a small amount of pasta water.
  2. In a skillet, heat olive oil over medium heat. Sauté the diced pancetta until crispy. Remove and set aside, keeping the fat in the pan.
  3. Add minced garlic to the skillet and sauté for about 30 seconds before adding the peas, seasoning with salt and pepper.
  4. Return the pancetta to the skillet, stir in heavy cream and Parmesan cheese, adding reserved pasta water if necessary for consistency.
  5. Toss in the cooked tortellini until well coated in sauce. Serve warm garnished with fresh basil.
