  • 1 (15 oz) can red kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 medium yellow onion, chopped
  • 3 tablespoons tomato paste
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder (optional, for spicier chili)
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. Sauté chopped onion for about 2 minutes until softened.
  3. Add ground beef and brown it while breaking it up (about 5 minutes). Drain excess fat.
  4. Stir in minced garlic, chili powder, cumin, brown sugar, oregano, salt, pepper, and tomato paste; mix well.
  5. Pour in beef broth and add fire-roasted tomatoes and both types of beans.
  6. Bring to a boil, then reduce heat to low and simmer uncovered for 1–2 hours.
