  • 1 cup cornmeal
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 375°F.
  2. In a skillet over medium heat, brown the ground beef. Add spices and cook until fragrant.
  3. Stir in black beans, corn, and diced tomatoes; set aside.
  4. In a mixing bowl, combine cornmeal, milk, eggs, baking powder, and melted butter until just mixed.
