  • 1 and 2/3 cup heavy cream-chilled
  • about 1/3 cup powdered sugar (to taste)
  • 1 teaspoon vanilla
  • 3 cups graham cracker crumbs
  • ½ cup+ 2 tablespoons unsalted butter-melted
  • ¼ cup strawberry jam
  • ½ cup unsalted butter-softened
  • 8 oz. cream cheese-softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 2/3 cup diced fresh strawberries
  • 2 (3 oz. pkg) berry blue Jello (or other flavor to your taste)
  • 1 and 1/4 cup boiling water
  • 2 cups blueberry pie filling
  • 1 cup of canned crushed pineapple-drained from juice
  • 2 ½ cups whipped cream
  • Fresh strawberries halved
  • Fresh blueberries
  • ¼ cup chocolate chips

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, melted butter, and strawberry jam. Press into a 9×13 inch baking dish.
  2. For the cream layer, beat softened cream cheese with powdered sugar and vanilla until smooth. Whip heavy cream separately and fold into the cream cheese mixture; spread over the crust.
  3. Dissolve berry blue Jello in boiling water and let cool slightly before pouring over the cream layer.
  4. Once set, top with blueberry pie filling, crushed pineapple, fresh strawberries, and blueberries.
  5. Chill for at least two hours before serving.
