  • 1 pound boneless, skinless chicken breasts
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • ½ cup green onions, chopped
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Pierce the potatoes and bake for 45-60 minutes until tender.
  2. In a skillet, heat olive oil over medium heat. Add diced chicken seasoned with salt, pepper, and smoked paprika. Cook until fully cooked.
  3. In a mixing bowl, combine cooked chicken with steamed broccoli, cheese, sour cream, and half of the chopped green onions.
  4. Once baked, let the potatoes cool slightly, cut them open, and scoop out some flesh to create space for the filling.
  5. Stuff each potato with the chicken mixture and return to the oven for an additional 10 minutes until heated through.
