Ingredients
- 6 bell peppers (any color)
- 1.5 pounds ground beef (90% lean)
- 1/2 cup onion (finely chopped)
- 1.5 cups cooked white rice
- 15 oz can tomato sauce
- 1.5 cups shredded mozzarella cheese
- 2 teaspoons olive oil
- 2 teaspoons garlic (minced)
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C). Prepare a large baking dish with cooking spray.
- Cut the tops off the bell peppers and remove seeds. Place cut-side down in the dish with water; cover with foil and bake for 25 minutes.
- In a skillet, heat olive oil over medium heat. Cook ground beef seasoned with salt and pepper until browned. Add onion and sauté until softened, then stir in garlic.
- Mix in cooked rice, tomato sauce, Italian seasoning, and half of the cheese; adjust seasoning as needed.
- Remove peppers from the oven; drain excess water. Fill each pepper generously with the beef mixture and top with remaining cheese. Cover with foil again and bake for another 20 minutes, then uncover for an additional 10 minutes until cheese is melted.
