  • 1 pound fresh strawberries (sliced)
  • 34 rhubarb stalks (sliced)
  • 1 gallon water (divided)
  • 12 cups sugar (to taste)
  • Ginger bug (for fermentation)

Instructions

  1. In a large pot, boil the sliced strawberries and rhubarb with half a gallon of water for 15-20 minutes until they soften.
  2. Allow the mixture to cool slightly, then pour it into a wide-mouth gallon jar.
  3. Add 1-2 cups of sugar, stirring until fully dissolved.
  4. Fill the jar with cold, unchlorinated water until nearly full. After cooling to room temperature, add the ginger bug.
  5. Cover the jar with a clean cloth secured with a rubber band and store it away from direct sunlight.
  6. Stir the mixture twice daily for even fermentation.
  7. Allow fermentation to occur for 2-7 days, tasting daily to reach your desired flavor.
  8. Strain out the solids and use a funnel to transfer the liquid into bottles.
  9. Let the bottles sit at room temperature for an additional 1-2 days before refrigerating.
