- 3–4 rhubarb stalks (sliced)
- 1 gallon water (divided)
- 1–2 cups sugar (to taste)
- Ginger bug (for fermentation)
Instructions
- In a large pot, boil the sliced strawberries and rhubarb with half a gallon of water for 15-20 minutes until they soften.
- Allow the mixture to cool slightly, then pour it into a wide-mouth gallon jar.
- Add 1-2 cups of sugar, stirring until fully dissolved.
- Fill the jar with cold, unchlorinated water until nearly full. After cooling to room temperature, add the ginger bug.
- Cover the jar with a clean cloth secured with a rubber band and store it away from direct sunlight.
- Stir the mixture twice daily for even fermentation.
