  • 1 pound steak (sirloin or ribeye), cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 1 large onion, diced
  • 1 bell pepper (any color), diced
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: garlic powder, dried thyme, red pepper flakes

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add halved baby potatoes seasoned with salt, pepper, garlic powder, and thyme. Cook for 15-20 minutes until golden brown. Set aside.
  2. In the same skillet, add another tablespoon of olive oil over medium-high heat. Cook steak pieces seasoned with salt and pepper for 4-5 minutes until browned. Remove from skillet.
  3. Sauté diced onion and bell pepper in the same skillet for about 5-7 minutes until tender.
  4. Return cooked steak and potatoes to the skillet. Mix well and heat through for an additional 2-3 minutes. Add red pepper flakes if desired.
  5. Serve garnished with fresh parsley.
