  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon peppermint extract
  • green food coloring (optional)
  • 4 ounces semisweet chocolate, chopped
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper.
  2. Melt the butter in a large saucepan over low heat. Remove from heat and stir in sugar, then add eggs one at a time along with vanilla.
  3. In another bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually mix into wet ingredients until combined.
  4. Pour batter into the prepared pan and bake for 25-30 minutes. Cool completely before frosting.
  5. Prepare mint frosting by mixing powdered sugar, milk, peppermint extract, and food coloring until smooth. Spread over cooled brownies.
  6. For ganache, simmer heavy cream then stir in chopped chocolate until smooth. Pour over frosted brownies and let set.
