  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract

  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 15 mint Oreo cookies (crushed)
  • 8 ounces cream cheese (softened)
  • 1 cup powdered sugar
  • ½ teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a greased 9×13 inch baking pan lined with parchment paper.
  2. Melt ½ cup butter and chopped chocolate in a saucepan over low heat until smooth. Stir in sugars, then add eggs one at a time, mixing well after each. Add vanilla extract, then fold in flour, salt, and baking powder until just combined. Pour into prepared pan.
  3. Bake for 20-25 minutes until a toothpick comes out with moist crumbs. Cool completely.
  4. Beat cream cheese until smooth, then mix in powdered sugar and peppermint extract before folding in crushed Oreos. Spread over cooled brownies.
  5. For ganache, melt remaining butter and chocolate chips in the microwave until smooth. Pour over the mint layer.
