  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 (3.4-ounce) box instant pistachio pudding mix
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped pistachios
  • ½ cup white chocolate chips (optional)
  • ½ cup green sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Mix in the pistachio pudding mix until combined.
  5. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until just combined.
  6. Fold in chopped pistachios and white chocolate chips if using.
  7. Scoop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart, and sprinkle with green decorations if desired.
  8. Bake for 10–12 minutes or until edges are golden but centers remain soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
