  • 8 ounces semi-sweet chocolate, chopped
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup powdered sugar (for the mint layer)
  • 2 tablespoons milk (for the mint layer)
  • 1 teaspoon peppermint extract (for the mint layer)
  • Green food coloring (as desired)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper.
  2. Melt butter and chopped chocolate in a saucepan over low heat until smooth. Let cool slightly.
  3. In a mixing bowl, whisk together sugar and melted chocolate mixture. Add eggs one at a time and stir in vanilla.
  4. In another bowl, combine flour, salt, and baking powder; gradually fold into the chocolate mixture until just combined.
  5. Pour batter into the prepared pan and bake for 25-30 minutes, until a toothpick comes out with moist crumbs. Cool completely.
  6. For the mint layer, mix powdered sugar, milk, peppermint extract, and food coloring until you achieve your desired tint. Spread over cooled brownies and swirl gently with a knife.
  7. Refrigerate for one hour before cutting into squares.
