- Optional: ¼ cup green food coloring
- 12 Oreo cookies (chopped for topping)
Instructions
- Preheat oven to 350°F (175°C). In a mixing bowl, combine crushed Oreo cookies with melted butter. Press into the bottom of a greased 9×13-inch baking dish to form the crust. Bake for 10 minutes and cool.
- Beat softened cream cheese until smooth in a large bowl. Gradually add powdered sugar, vanilla extract, and mint extract; mix until well combined.
- Gently fold in thawed whipped topping until fully incorporated. Add green food coloring if desired.
- Spread cheesecake filling over cooled crust and sprinkle with chopped Oreos, pressing lightly into the filling.
- Refrigerate for at least 4 hours until set. Cut into squares and enjoy!
