  • ½ teaspoon salt
  • 1 cup unsweetened cocoa powder
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mint chocolate kisses, unwrapped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cocoa powder. Set aside.
  3. Cream the softened butter with granulated and brown sugars until light and fluffy.
  4. Add eggs one at a time followed by vanilla extract; mix until smooth.
  5. Gradually add dry ingredients into the wet mixture until just combined.
  6. Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until edges are set but centers remain soft.
  8. Press a mint chocolate kiss into each warm cookie as soon as they come out of the oven.
  9. Allow cookies to cool briefly on the sheet before transferring to a wire rack.
