Ingredients
- 1 ¾ cups all-purpose flour

- ½ cup vegetable oil
- 1 cup boiling water
- 1 cup unsalted butter (for frosting)
- 8 ounces bittersweet chocolate (for ganache)
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 4 cups powdered sugar
- 2 teaspoons peppermint extract
- 3–4 tablespoons heavy cream
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla; beat on medium speed for two minutes. Stir in boiling water until smooth.
- Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Cool in pans for ten minutes before transferring to a wire rack.
- For the mint frosting: Beat softened butter until creamy; gradually add powdered sugar and peppermint extract. Adjust consistency with heavy cream.
- Assemble cake by layering frosting between cake layers and on top/sides of the cake.
- For ganache: Melt bittersweet chocolate with heavy cream over low heat; cool slightly before pouring over the frosted cake.
