  • 4 cups powdered sugar
  • 2 teaspoons peppermint extract
  • 34 tablespoons heavy cream
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla; beat on medium speed for two minutes. Stir in boiling water until smooth.
  4. Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Cool in pans for ten minutes before transferring to a wire rack.
  5. For the mint frosting: Beat softened butter until creamy; gradually add powdered sugar and peppermint extract. Adjust consistency with heavy cream.
  6. Assemble cake by layering frosting between cake layers and on top/sides of the cake.
  7. For ganache: Melt bittersweet chocolate with heavy cream over low heat; cool slightly before pouring over the frosted cake.
