  • 1 pound fresh spinach
  • 1 tablespoon olive oil
  • 1 small onion
  • 2 cloves garlic
  • 1 cup ricotta cheese
  • 1 cup feta cheese
  • 17.3 ounces frozen puff pastry
  • 1 egg (for egg wash)

Instructions

  1. Sauté the chopped onion in olive oil over medium heat until translucent, then add garlic and cook for another 30 seconds. Stir in spinach until wilted, then remove from heat.
  2. In a mixing bowl, combine the cooked spinach mixture with ricotta, feta, salt, pepper, and nutmeg.
  3. Roll out thawed puff pastry on a floured surface and cut into squares or circles.
  4. Place a spoonful of filling on each piece of pastry, fold over, seal edges with a fork, and brush with beaten egg.
  5. Bake at 400°F (200°C) for 15-20 minutes until golden brown.
