Ingredients
- 1 cup long-grain rice
- 3 tablespoons olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 10 ounces fresh spinach, chopped
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 cups vegetable broth
- 1/4 cup fresh dill, finely chopped
- 1/4 cup fresh parsley, finely chopped
- Juice of 1 lemon
Instructions
- Rinse 1 cup of long-grain rice under cold water until clear. In a large pot, heat 3 tablespoons of olive oil over medium heat; sauté 1 chopped onion and 2 minced garlic cloves until the onion is translucent.
- Add 10 ounces of chopped fresh spinach to the pot; cook until wilted. Season with 1 teaspoon salt, 1/2 teaspoon black pepper, and optional red pepper flakes to taste.
- Stir in the rinsed rice, combine well, then pour in 2 cups of vegetable broth and bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
- Remove from heat, stir in 1/4 cup each of chopped fresh dill and parsley along with the juice of 1 lemon. Fluff with a fork and serve warm.
