  • 68 mini Persian cucumbers
  • 2 teaspoons kosher salt
  • 1 garlic clove, finely minced
  • 2 teaspoons sugar
  • 2 teaspoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 1/2 teaspoon fish sauce
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon chili paste (adjust to your own taste)
  • 1 tablespoon sesame seeds (I like to use half black, half white)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Slice the mini Persian cucumbers and mix with kosher salt; let sit for 30 minutes to draw out moisture.
  2. In a separate bowl, whisk together minced garlic, sugar, soy sauce, rice wine vinegar, fish sauce, toasted sesame oil, and chili paste.
  3. Drain cucumbers and rinse off excess salt; combine with the dressing mixture.
  4. Toss gently until well coated and chill in the fridge for at least 30 minutes before serving.
