  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar (divided)
  • 3 large eggs
  • ½ cup sour cream
  • ½ cup heavy cream
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • Sea salt (to taste)

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and sugar; press into a springform pan.
  2. Bake crust for 10 minutes; cool. In another bowl, beat cream cheese until smooth; add sugar, vanilla, and eggs one at a time. Mix in sour cream and heavy cream.
  3. Pour filling over the cooled crust; bake for 55-60 minutes until slightly jiggly in the center. Cool in the oven with door ajar for an hour.
  4. Refrigerate for at least 4 hours or overnight.
  5. For caramel: melt sugar in a saucepan until golden brown, add butter and cream carefully. Stir in sea salt.
  6. Drizzle cooled caramel over chilled cheesecake before serving.
