  • 4 cups low-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups fresh spinach or kale
  • 1 cup diced potatoes
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, warm the olive oil. Add the onion, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in the garlic, thyme, and rosemary; cook for an additional minute until fragrant.
  3. Add the chicken breasts along with the chicken broth and bay leaf. Bring to a boil then reduce to a simmer. Cover and cook for about 20 minutes or until chicken is cooked through.
  4. Remove the chicken from the pot and shred it using two forks before returning it to the soup.
